Khichu
Ingredients:
1 cup rice flour
2 cups water
1 tsp cumin seeds
½ tsp carom seeds (ajwain)
1–2 green chilies, crushed
Salt to taste
1 tbsp oil
Red chili powder (optional, for topping)
Preparation Time:

Cook: 10–12 minutes
Instructions:
Boil spiced water:
In a pan, boil water with cumin seeds, ajwain, crushed chilies, salt, and oil.Add rice flour:
Reduce heat to low. Add rice flour slowly while stirring continuously to avoid lumps.Cook mixture:
Stir until it forms a thick, smooth dough. Cook for 2–3 minutes more.Steam:
Cover the pan and steam on very low heat for 5 minutes.Serve:
Scoop khichu into bowls. Drizzle oil on top and sprinkle chili powder if desired.
Tips:
Stir constantly to keep the texture smooth.
Serve hot for best taste.
You can add sesame seeds for extra flavor.
