Ingredients:

For vegetables:

  • 1 cup surti papdi (flat beans) or green beans

  • 1 small eggplant (brinjal), chopped

  • 1 potato, cubed

  • 1 raw banana, sliced

  • ½ cup sweet potatoes, cubed

For muthiya (dumplings):

  • ½ cup gram flour (besan)

  • 2 tbsp wheat flour

  • 1 tbsp chopped fenugreek (methi) leaves

  • Salt and chili powder to taste

  • 1 tsp sugar

  • 1 tbsp oil

  • Water as needed

For masala:

  • ½ cup grated coconut

  • 2 tbsp chopped coriander

  • 1 tbsp ginger-garlic paste

  • 1 tsp cumin-coriander powder

  • ½ tsp turmeric

  • Salt and sugar to taste

  • 2 tbsp oil

Instructions:

  1. Make muthiya: Mix dumpling ingredients, form small balls, and deep fry or steam until cooked. Keep aside.

  2. Prepare masala: Mix coconut, coriander, spices, salt, and sugar into a coarse paste.

  3. Cook vegetables: Heat oil in a pan, add vegetables and mix with the masala. Stir gently.

  4. Add a little water, cover, and cook on low heat until vegetables are tender.

  5. Add fried muthiya and cook for 5 more minutes.

  6. Garnish with fresh coriander and serve hot with puri or roti.
