Ingredients:

  • 1 cup rice flour

  • 2 cups water

  • 1 tsp cumin seeds

  • ½ tsp carom seeds (ajwain)

  • 1–2 green chilies, crushed

  • Salt to taste

  • 1 tbsp oil

  • Red chili powder (optional, for topping)

Preparation Time:

  • Prep: 5 minutes

  • Cook: 10–12 minutes

Instructions:

  1. Boil spiced water:
    In a pan, boil water with cumin seeds, ajwain, crushed chilies, salt, and oil.

  2. Add rice flour:
    Reduce heat to low. Add rice flour slowly while stirring continuously to avoid lumps.

  3. Cook mixture:
    Stir until it forms a thick, smooth dough. Cook for 2–3 minutes more.

  4. Steam:
    Cover the pan and steam on very low heat for 5 minutes.

  5. Serve:
    Scoop khichu into bowls. Drizzle oil on top and sprinkle chili powder if desired.

Tips:

  • Stir constantly to keep the texture smooth.

  • Serve hot for best taste.

  • You can add sesame seeds for extra flavor.
