Khandvi

Ingredients:

  • 1 cup gram flour (besan)

  • 1 cup yogurt (curd)

  • 2 cups water

  • ½ tsp turmeric powder

  • Salt to taste

For tempering:

  • 1 tbsp oil

  • 1 tsp mustard seeds

  • 1 tsp sesame seeds

  • Few curry leaves

  • Grated coconut (optional)

  • Chopped coriander leaves

Instructions:

  1. Mix gram flour, yogurt, water, turmeric, and salt to make a smooth batter.

  2. Cook the mixture in a pan on low heat, stirring continuously until it thickens.

  3. Spread a thin layer of the cooked batter on a greased plate or flat surface.

  4. Let it cool slightly, then cut into strips and roll them gently.

  5. Heat oil, add mustard seeds, sesame seeds, and curry leaves. Pour over the rolls.

  6. Garnish with coconut and coriander.
